Première Fournée breads are proofed according to traditional methods. Proofing is the last phase of the leavening process once the bread has been shaped. The bread is allowed to rise in special proofing cabinets called “Parisiens.” It is the proofing stage that determines how much the bread is allowed to swell, thus giving it its final volume, which is always unique from loaf to loaf in the case of Première Fournée breads.(Picture for reference only.)
